The original recipe for my Rum Cakes was given to me many years ago by my Mother-in-Law. She spent most of her childhood in a small town in Jamaica called “Pear Tree River” in the Parish of St Thomas, and was shown at a very young age how to make these delicious cakes. That was almost 70 years ago and thankfully the family recipe is still as good today as it was then.
The fruits are soaked for a many months in the finest Jamaican Rum and this coupled with a combination of Island spices gives you a superbly moist, aromatic and unforgettable cake.
The Rum cakes are suitable for Weddings, Christenings, Birthdays, basically any occasion you would like to celebrate. They are especially popular at Christmas and New Year.
